Why our bread takes two days

Customers sometimes ask why we cannot simply bake more when we sell out. The answer is time: every loaf we sell today was mixed yesterday afternoon.

The long, cool fermentation develops flavour and makes the bread easier to digest. It also means we have to guess tomorrow's demand today.

If you want to be sure of a particular loaf, you can always reserve it the day before.
